corn dog muffin remix

i’ve done a post on corn dog muffins before but, i make them all the time, i’ve changed the recipe so i thought i would do another post. what kid doesn’t like hot dogs? since there are a lot of childhood treats eli can’t have i let him have hot dogs. not just any hot dog though, it has to be “free” of just about everything. the only ones i buy are coleman hot dogs. here’s a list of the ingredients. INGREDIENTS: Beef, Water, Contains less than 2% of the following: Allspice, Celery Juice Powder, Evaporated Cane Juice, Garlic Powder, Ginger, Honey, Lactic Acid Starter Culture (not from dairy), Mustard, Nutmeg, Onion Powder, Paprika, Pepper, Sea Salt

if you look at their website you’ll find a whole bunch of info. including where you can buy them. hot dogs may not be appealing to many adults but you can’t deny that kids love ’em.

corn dog muffins

3/4 cup cornmeal
3/4 cup gf flour of choice
1/2 cup tapioca starch
1 tsp baking soda
1 tsp guar/xantham gum
1 tsp salt
3/4 cup applesauce
1 cup milk of choice
1/4 cup canola oil
3-4 hot dogs, chopped and pan fried

350°
in a medium sized bowl whisk all dry ingredients. in another bowl whisk wet ingredients. add dry ingredients to wet ingredients, mix well. fold in hot dogs. bake in oiled muffin tin for 20 mins or until golden.

the kids have been sick all week with a stomach bug, which i’m sure is the result of a very fun but busy weekend. eli had it the worst. so, after 48hrs of eating nothing but a few slices of an apple and drinking tons of water, i knew he would need something soft on his tummy today. i was inspired by nonna joan over at baby bites and two rotting bananas that were sitting on the counter, i was going to make muffins. i went and asked elsa, who was in her room mixing up stuff in her play kitchen (seriously), if she wanted to help. of course she did!

right as we were putting the muffins in the oven eli came leaping down the stairs and yelled “i’m all better! i can walk better! i can talk fast! and i can draw!” then elsa said “eli! we made these muffins so you could get better!”

45 minutes later…….

“mom! these are awesome!”

feel better banana muffins

¼ cup oat flour (gf oats ground in food processor)
¼ cup coconut flour (shredded coconut ground in food processor, will still be grainy)
¼ cup tapioca startch
1¼ cup brown rice flour
1 tsp guar gum
2 tbs flax meal
3 tsp baking powder
½ tsp salt
2 tbs agave syrup (more if you want sweeter muffins)
6 drops liquid stevia
1 egg
1 cup hazelnut milk, you can use whatever kind you like
¼ cup olive oil
2 mashed bananas

350°
in a large bowl whisk all dry ingredients together. in a medium sized bowl mix together all wet ingredients. add the wet ingredients to the dry. mix until no dry is visible. do not over mix. the batter may still look slightly lumpy and that’s ok. fold in the mashed banana. pour into prepared muffin tins and bake 20 mins.

•note•
i’m sure you could use any flour you have on hand, i had some oat and coconut flour left over from the other day which is why i used them. may result in a different textured muffin though.

mom! what’s for breakfast?

what a great way to start the day! i found this recipe here. i will definitely be making these again and again and again……… these muffins will keep you full until lunch! serve them with fruit or a kefir smoothie. yum!

chocolate banana muffins

3 ripe bananas, smashed
1/3 c canola oil
3 tbs peanut butter
½ c white sugar
½ c light brown sugar
1 egg, beaten
1 tsp vanilla extract
1 tsp baking soda
2 tsp cinnamon
½ tsp nutmeg
2 tbs unsweetened cocoa powder
¼ tsp salt
½ c millet flour
½ c sorghum flour
½ c tapioca starch
1 tsp guar gum

350°
mix banana, oil, peanut butter, sugars, egg and vanilla in large bowl. mix well. sprinkle baking soda, cinnamon and nutmeg over the top and blend well. in another bowl mix the remaining ingredients. add flour to wet ingredients in two batches. bake for 20-25 mins.

a quick non food note. we love music but sometimes kids music just isn’t right for adults and vice versa. we found this cd by they might be giants that works for everybody. we especially like the songs: number 2, high five, and seven days of the week! if you have young children you should check it out.

carrot-apple muffins

muffinit’s been a long week. i made these for eli’s lunch after he’d been sick. i was thinking it would be easy on his stomach, unfortunately his school has some stupid rule that the kids have to eat their healthy food before junk food. i personally think it’s none of the schools business telling kids what to eat when. anyways eli thought these were cupcakes so all he ate for lunch was a cheese stick and some yogurt. needless to say the first thing he said to me after school was “mom i’m starving!”

carrot-apple muffins

2/3 cup sorghum flour
1/3 cup tapioca starch flour
1/4 cup flax seed meal
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp guar gum
2 carrots roughly chopped
2 small apples peeled, cored and chopped
1/2 teaspoon lemon juice
1/2 cup sugar
1 jumbo egg
4 tbs olive oil
2 ounces candied ginger (homemade see previous post)
1 teaspoon cinnamon
1 1/2 teaspoons vanilla

375°

put ginger in food processor and blend till it starts to ball up. put in mixing bowl. put carrots, apples, and lemon juice in food processor. mix till very finely chopped. mix into bowl with ginger. add sugar, oil, vanilla and egg. mix well. mix dry ingredients together then add to wet ingredients. blend for 2-3 minutes. line muffin tins and add batter. bake 12-15 mins. use pick test to see if done. (toothpick will come out clean)  as with almost everything gluten free do not over cook.

ham n cheese scone type thing

i set out to make ham n cheese biscuits for eli’s lunch but they tasted more like a scone. i haven’t made a good gluten free biscuit yet. these were a big hit with the kids though and eli has already asked for them again.

1 cup rice flour
2/3 cup potato starch
1/3 cup tapioca starch
1 tbs baking powder
1 tsp baking soda
1/2 tsp guar gum
2 tsp sugar
1/3 cup butter
2/3 cup milk
sliced cheddar cheese
sliced ham

450°
mix dry ingredients. add cold butter mix until crumbly. add milk. don’t over mix.
lightly grease muffin tins. add small amount of dough in tins. top with slice of cheese, ham, cheese. add rest of dough on top. bake 10-12 mins.
makes 6

corndog muffins

corndog muffinthis is a great kids lunch! thanks to the baking beauties for the great cornbread muffin recipe. i just add some pan fried hot dog slices to the batter and you have corndog muffins. these are easy to prep the night before. i mix the dry in one bowl, the wet in another, cook the dogs and your done. the next morning get up, preheat the oven, mix everything together and they cook while the kids eat breakfast.
