green crackers

eli loves these because they’re green, his favorite color. i borrowed this recipe from diet, dessert, and dogs. these are a new lunch box favorite for me because they are a cinch to make. it seems to be a very versatile recipe, that can be made according to what you have on hand, my favorite kind of recipe.

3/4 cup cashews
1/4 cup flax meal
1/4 cup gf flour
1/4 tsp salt
1/4 tsp baking soda
1/2 generous cup green stuff, i used cilantro, spinach, and a little fresh jalepeno
2 tbs coconut oil, melted
2-3 tbs water

line cookie sheet with parchment paper,dust with flour, set aside. in bowl of food processor grind cashews and flax meal into a fine meal. add flour, salt and baking soda give it a whirl to combine. add the green stuff, oil and water whirl until mixture forms a soft dough. roll directly onto cookie sheet to desired thickness. slice into crackers with pizza cutter and bake for 15 mins. remove from oven and flip them over carefully then return to oven for another 15 mins.

*note* watch these as they cook. most of the time i only have to cook these 10 min then flip for 10 more minutes. sometimes i don’t even need to bake longer than 15 mins on one side.

i got this recipe from celiac teen, i didn’t change a thing in her recipe, the crackers were awesome! i had planned to make nanaimo bars but they were eaten up before i had a chance. na-no-mo-bars! but we made s’mores, and had graham crackers with peanut butter on them, it was great! i will be making another batch soon and i will hide some so i can make nanaimo bars.

eli requested tomato soup for lunch today so i had to find a recipe for gluten-free crackers. you can’t have tomato soup without crackers and cheese.
