gluten free tortillas

these are so good! these are so easy to make (only two ingredients)! i’ve made them half a dozen times or more since i came across the recipe on book of yum. you can fill these with whatever you like, we like ours best with hummus and veggies. just follow her recipe as written you won’t be sorry.
on another note my sister, who is a librarian, reminded me that tomorrow starts banned books week. some of the books on this list may surprise you: harry potter-really?, a wrinkle in time-are you kidding?, of mice and men??, maya angelou is on the list-seriously? go read a banned book today!

flat-bread and hummus

for lunch today eli had flat-bread and hummus. i used a living without recipe for the flat-bread. mine looked nothing like the picture but they tasted great. more like a pancake. eli was very excited about his lunch after school today. the first big hit! you can make the batter the night before just don’t fry them up till morning. these are definitely best when fresh. the hummus was not traditional since i had no tahini or lemons. here’s how i made the dip.

2 cups cooked chickpeas

2 TBS lime juice

garlic to taste, i used 4 small cloves

cayenne to taste, i used about 1/2 tsp

1 TBS tomato paste

1/4 tsp chili powder

1/4 tsp cumin

salt to taste

give a whirl in the old food processor adding olive oil and water till smooth.

first day of school

off we go

so yesterday was the first day of school and i tried to post pictures of eli’s lunch but i am a little challenged when it comes to computers so it didn’t happen. on sunday i asked eli what he wanted for lunch on monday and he gave me enough ideas to fill the whole week. on his first day he wanted flat-bread tuna sandwich, fruit salad, carrots and cauliflower. so that’s what he got, with a few extras. the flat-bread recipe i use is awesome! today he wanted rice balls i didn’t take pictures. this is a big change in our routine and is going to take some getting used to. *yawn*
