frustrated…

bewildered, and baffled.…i can’t figure out why a gluten free diet worked for a year and then stopped. eli’s eczema has returned and it’s nearly as bad as it was before we took gluten out of his diet. we are going to “attempt” sugar free as well. this will be more difficult because he craves sweets. this recipe needs work. as i ate one i imagined them having cinnamon, nutmeg and cloves in them. i will do that next time. the kids love them and that’s all that matters.

sweet potato cookies

2 cups almond meal
5 dates chopped
1 med white sweet potato, steamed and mashed
2 tbs agave syrup
3 egg yolks

350°
in food processor blend almond meal and dates. add mashed sweet potato, agave and egg yolks. mix well.
bake on parchment covered cookie sheets. place tbs size balls of dough on sheets and flatten with damp hands.
bake 12-15 mins.

    Are you sure that gluten isn’t sneaking in somehow? Even in a very small amount? Like via a product you think is safe? For example, I can’t eat anything at the 20 ppm level, only the less than 10 ppm level. Food for thought … because you’re dairy free, too, right? Gluten and dairy are the big players in eczema.

    It’s good when a cookie pleases, but you can still make immprovements. It’s fun to experiment and succeed in baking. 🙂

    Oops, I see you are not dairy free. If you are not using products that are at the 20 ppm level, I’d remove dairy for a trial before sugar. Like I said, dairy is often a culprit with eczema. Best of luck!
